- 2 pounds lean ground beef
- 1 small onion, diced (about 1 cup)
- 1-2 medium jalapeños, seeded and diced
- 1 clove garlic, minced
- 8 ounces tomato sauce
- 2 – 14.5 ounce cans fire roasted tomatoes, diced
- 1 15 ounce can kidney beans, drained and rinsed
- 1 15 ounce can pinto beans, drained and rinsed
- 1 cup beef broth
- 3 tablespoons chili powder
- 1 teaspoon cumin
- 1 teaspoon oregano
- 1/4-1/2 teaspoon cayenne pepper
- 1/2 teaspoon ground chipotle pepper
- Salt and pepper to taste
Instructions
- Brown the beef in a skillet, drain excess fat, and reserve a tablespoon.
- Sauté the onion and jalapeños in the same skillet, then add garlic.
- Combine browned beef and sautéed veggies in a crockpot with all other ingredients.
- Set the crockpot to low and cook for 6-8 hours or high for 3-4 hours.
- Serve hot with desired toppings.
Notes
Feel free to substitute ground turkey or chicken for a leaner option.
Store leftovers in an airtight container in the refrigerator for up to 4 days.
