- 1 yellow onion, sliced
- 2 pounds boneless skinless chicken breasts
- 10 ounce can petite diced tomatoes with jalapeño and cilantro
- 2 tablespoons fresh lime juice
- 2 cloves garlic, minced
- 2 teaspoons chili powder
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1 teaspoon granulated sugar, optional
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1 red bell pepper, sliced into strips
- 1 yellow bell pepper, sliced into strips
- 12 small flour tortillas

Instructions
- Layer sliced onions in the bottom of the slow cooker and place the chicken breasts on top.
- In a medium bowl, mix diced tomatoes, lime juice, minced garlic, chili powder, cumin, paprika, sugar (if using), salt, and pepper. Pour this mixture over the chicken.
- Option 1: For softer peppers, add the sliced bell peppers on top before cooking. Option 2: For firmer peppers, add them during the last hour of cooking.
- Cover and cook on low for 3-5 hours or high for 2-3 hours until the chicken is fully cooked and shreds easily.
- Remove the chicken, let it rest for 5 minutes, then discard about 1 cup of cooking liquid and shred the chicken before returning it to the crockpot.
- Optional: Char the tortillas in a skillet. Serve the chicken and veggies in tortillas with your favorite toppings.
Notes
For extra heat, consider using spicy diced tomatoes.
