Description

These Crockpot Chicken Fajitas are packed with flavor and effortless to prepare, featuring tender chicken, vibrant bell peppers, and zesty diced tomatoes. Perfect for a quick dinner that satisfies both taste and health, this dish is a fresh take on a classic favorite.


Ingredients

  • 1 yellow onion, sliced
  • 2 pounds boneless skinless chicken breasts
  • 10 ounce can petite diced tomatoes with jalapeño and cilantro
  • 2 tablespoons fresh lime juice
  • 2 cloves garlic, minced
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon granulated sugar, optional
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 red bell pepper, sliced into strips
  • 1 yellow bell pepper, sliced into strips
  • 12 small flour tortillas
  • sliced avocado
  • chopped fresh cilantro
  • sour cream or plain greek yogurt


Instructions

  1. Layer sliced onions in the bottom of the slow cooker and place the chicken breasts on top.
  2. In a medium bowl, mix diced tomatoes, lime juice, minced garlic, chili powder, cumin, paprika, sugar (if using), salt, and pepper. Pour this mixture over the chicken.
  3. Option 1: For softer peppers, add the sliced bell peppers on top before cooking. Option 2: For firmer peppers, add them during the last hour of cooking.
  4. Cover and cook on low for 3-5 hours or high for 2-3 hours until the chicken is fully cooked and shreds easily.
  5. Remove the chicken, let it rest for 5 minutes, then discard about 1 cup of cooking liquid and shred the chicken before returning it to the crockpot.
  6. Optional: Char the tortillas in a skillet. Serve the chicken and veggies in tortillas with your favorite toppings.

Notes

For extra heat, consider using spicy diced tomatoes.
Serve with a side of rice or beans for a complete meal.
