Description

Crockpot Mississippi Meatloaf is a flavorful and easy meal that features ground beef, zesty ranch seasoning, and savory pepperoncini. Perfect for a cozy family dinner!


Ingredients

  • 2 pounds ground beef used 90/10
  • 1 cup panko bread crumbs
  • 1 cup milk
  • 2 eggs
  • 2 1 ounce ranch dressing seasoning packets
  • 2 1 ounce au jus gravy mix packets
  • 1 tablespoon minced dried onion
  • 2 cups water
  • 6-8 pepperoncini peppers
  • optional* 1 tablespoon chopped fresh parsley for garnish


Instructions

  • In a large bowl, combine ground beef, panko bread crumbs, milk, eggs, one ranch packet, one au jus packet, and minced dried onion until just mixed.
  • Whisk together the remaining ranch and au jus packets with the water and set aside.
  • Line the bottom of a 5 quart or larger slow cooker with foil and spray with cooking spray.
  • Shape the meat mixture into a loaf and place it on the foil in the slow cooker.
  • Pour the water mixture over and around the meatloaf, then add the pepperoncini peppers.
  • Cover and cook on low for 6 hours or high for 3-4 hours until the meatloaf reaches an internal temperature of 165F.
  • If desired, garnish with fresh parsley before serving.
  • Serve warm over mashed potatoes or rice.

Notes

Ensure the ground beef has a good fat content for better flavor.
You can adjust the number of pepperoncini peppers according to your heat preference.
This dish pairs well with sides like mashed potatoes or rice.
