This Crockpot Tortellini Soup is a hearty meal featuring tender tortellini, savory sausage, and creamy cheese. Perfect for a quick and satisfying dinner!

- 1 bag frozen tortellini, 19 oz bag, meat or cheese filled
- 1 pound ground sausage, i prefer hot jimmy dean sausage, precooked beforehand
- 1 can diced tomatoes, 28 oz, or rotel
- 4 cup chicken broth, or vegetable broth
- 1 block cream cheese, 8 oz, room temp, cut into cubes
- 1 bag spinach, fresh leaves, 10 oz, optional
Instructions
- Brown ground sausage in a skillet until no longer pink. Drain the grease and transfer to the Crockpot.
- Add the diced tomatoes and chicken broth to the Crockpot. Stir to mix well.
- Cover and cook on low for 5 hours, stirring twice during cooking.
- After 5 hours, stir in the frozen tortellini, cubes of cream cheese, and fresh spinach. Ensure everything is submerged in the liquid.
- Cook for an additional 30 minutes until the tortellini is tender and the cream cheese has melted, creating a creamy soup.
Notes
You can use either meat or cheese tortellini depending on your preference.
For added flavor, consider using garlic or onions while browning the sausage.
