Description

This Crockpot Tortellini Soup is a hearty meal featuring tender tortellini, savory sausage, and creamy cheese. Perfect for a quick and satisfying dinner!


Ingredients

  • 1 bag frozen tortellini, 19 oz bag, meat or cheese filled
  • 1 pound ground sausage, i prefer hot jimmy dean sausage, precooked beforehand
  • 1 can diced tomatoes, 28 oz, or rotel
  • 4 cup chicken broth, or vegetable broth
  • 1 block cream cheese, 8 oz, room temp, cut into cubes
  • 1 bag spinach, fresh leaves, 10 oz, optional


Instructions

  1. Brown ground sausage in a skillet until no longer pink. Drain the grease and transfer to the Crockpot.
  2. Add the diced tomatoes and chicken broth to the Crockpot. Stir to mix well.
  3. Cover and cook on low for 5 hours, stirring twice during cooking.
  4. After 5 hours, stir in the frozen tortellini, cubes of cream cheese, and fresh spinach. Ensure everything is submerged in the liquid.
  5. Cook for an additional 30 minutes until the tortellini is tender and the cream cheese has melted, creating a creamy soup.

Notes

You can use either meat or cheese tortellini depending on your preference.
For added flavor, consider using garlic or onions while browning the sausage.
