- 10 oz. box frozen chopped spinach (thawed and squeezed)
- 8 oz. mushrooms
- 1 garlic clove (minced)
- ⅛ tsp salt
- 1 tbsp cooking oil (divided)
- 2 oz. feta cheese
- 4 large eggs
- ¼ cup parmesan cheese (grated)
- ¼ tsp black pepper (freshly cracked)
- 1 cup milk
- ½ cup mozzarella cheese (shredded)
Instructions
- Preheat the oven to 350ºF. Prepare the spinach by thawing and squeezing out excess moisture.
- Clean the mushrooms, then slice them thinly. Mince the garlic.
- In a skillet, combine the mushrooms, garlic, salt, and ½ tablespoon of cooking oil. Sauté over medium heat until the mushrooms are tender and all moisture has evaporated.
- Grease a 9-inch pie plate with the remaining ½ tablespoon of cooking oil. Layer the mushrooms, spinach, and crumbled feta cheese in the pie plate.
- In a separate bowl, whisk together the eggs, Parmesan cheese, black pepper, and milk until combined.
- Pour the egg mixture over the layered vegetables and cheese in the pie plate. Top with shredded mozzarella cheese.
- Bake in the preheated oven for about 50 minutes, or until golden brown on top and the internal temperature reaches 160ºF. Slice and serve!
Notes
Make sure to squeeze out as much water as possible from the spinach to keep the quiche from becoming soggy.
