- 6 large eggs
- ¼ cup mayonnaise (60 grams)
- 1 tablespoon sweet pickle relish (18 grams)
- 1 teaspoon prepared yellow mustard
- Tiny pinch of salt
- Paprika optional
Instructions
- Fill a saucepan with 1 inch of water, place a steamer basket on top, and bring to a boil. Once boiling, carefully add the eggs, cover, and cook for 15 minutes.
- Transfer the eggs to a large bowl filled with ice water to cool for 5 minutes.
- Peel the cooled eggs, slice them in half lengthwise, and remove the yolks into a small bowl.
- Mash the yolks and mix in the mayonnaise, relish, mustard, and salt until well combined. Fill the egg whites with this mixture.
- Sprinkle paprika on top and serve or refrigerate until ready.
Notes
For easier peeling, use eggs that are a few days old.
If you like a bit of heat, consider adding a dash of hot sauce to the filling.
These can be made a day in advance, just keep them covered in the fridge.
