- 3 cups nacho cheese doritos lightly crushed
- 2 cups rotisserie chicken cut into small pieces
- 1 can black beans 15oz drained and rinsed
- 1 can corn 15oz drained
- 1 can fire roasted rotel 10oz
- 1 can cream of chicken soup 10.5oz
- 1 cup sour cream
- 1 tablespoon taco seasoning
- 2 1/2 cups cheddar cheese freshly grated
- 1/4 cup cherry tomatoes quartered
- 2 tablespoons cilantro chopped
Instructions
- Preheat the oven to 350°F (175°C) and prepare a 9×13 baking dish by spraying it with non-stick spray.
- Crush the Doritos and spread half of them evenly in the bottom of the casserole dish.
- In a mixing bowl, combine rotisserie chicken, black beans, corn, Rotel, cream of chicken soup, sour cream, taco seasoning, and 1 cup of cheddar cheese. Mix until well combined.
- Spread the chicken mixture over the Doritos layer evenly and top with the remaining crushed Doritos and a layer of cheddar cheese.
- Bake in the preheated oven for 20-25 minutes, or until the cheese is lightly golden brown. Remove from the oven and garnish with cherry tomatoes and cilantro. Serve hot and enjoy!
