- 2 cups doritos, finely crushed
- 1 cup doritos, loosely crushed
- 1 pound ground beef
- ½ yellow onion, diced
- 1 teaspoon garlic, minced
- 12 ounces frozen corn
- 1 packet taco seasoning
- 1 (14.5-ounce) can petite diced tomatoes with green chilies, not drained
- 1 cup sour cream
- 3 cups mexican cheese blend
- sliced green onions, diced tomatoes, shredded lettuce, avocado, sour cream (for optional garnish)
Instructions
- Preheat the oven to 350°F.
- Spray a 9×13-inch casserole dish with nonstick spray.
- Gently crush the chips and set them aside; two cups should be finely crushed like breadcrumbs, and one cup should be larger chunks for topping later.
- In a large skillet, cook the ground beef with the diced onions until browned and drain any excess grease.
- Add the minced garlic and cook for one minute.
- Stir in the frozen corn, taco seasoning, diced tomatoes with chiles, and two cups of the finely crushed Doritos.
- Remove from heat, then mix in the sour cream and two cups of cheese.
- Pour the mixture into the prepared casserole dish and bake for five minutes until warmed through.
- Top with one cup of cheese and the loosely crushed Doritos, then bake for another five minutes until the cheese is melted.
- Remove from oven and serve.
Notes
Feel free to customize toppings to your liking, such as jalapeños or olives.
