Description

This Easy Lasagna Soup combines savory beef, tomatoes, and cheesy goodness, offering a quick and hearty meal that feels like a warm hug in a bowl.


Ingredients

  • Avocado Oil
  • Yellow Onion
  • Garlic
  • Ground Beef (90/10)
  • Italian Seasoning
  • Canned Diced Tomatoes/Marinara Sauce
  • Low-Sodium Chicken Broth
  • Tomato Paste
  • Pure Maple Syrup or Sugar
  • Lasagna Noodles
  • Sea Salt & Black Pepper
  • Mozzarella Cheese
  • Ricotta Cheese
  • Parmesan Cheese
  • Fresh Basil


Instructions

  • Heat the avocado oil in a large pot and sauté the chopped onion until translucent. Add minced garlic.
  • Brown the ground beef in the pot until fully cooked.
  • Stir in Italian seasoning, sea salt, and black pepper until well mixed.
  • Add canned tomatoes, chicken broth, and tomato paste, stirring to combine. Bring to a simmer for 10 minutes.
  • Break lasagna noodles into pieces and stir into the simmering broth. Cook until tender about 10-12 minutes.
  • Add optional sweetener, then fold in mozzarella, ricotta, and Parmesan cheeses until melted.
  • Finish with chopped fresh basil before serving.
