Description

Ingredients

  • 1 pound carrots, peeled and grated (5-6 medium carrots)
  • 1 teaspoon lemon zest, from 1 lemon
  • 1/4 cup lemon juice, freshly squeezed (1 large lemon)
  • 1 tablespoon dijon mustard
  • 1 tablespoon honey
  • 1 teaspoon kosher salt (use less salt if all you have is table salt)
  • 1/4 teaspoon black pepper, freshly cracked
  • 1/4 cup olive oil, high quality
  • 2 tablespoons fresh parsley, finely chopped


Instructions

  1. In a medium bowl, zest the lemon until you have about 1 teaspoon of zest.
  2. Juice the lemon into the same bowl, needing 1/4 cup of lemon juice. Use 2 lemons if small.
  3. Add dijon mustard, honey, kosher salt, and black pepper to the bowl.
  4. Whisk all ingredients together until combined.
  5. While whisking, slowly drizzle in high quality olive oil to emulsify the dressing.
  6. Peel the carrots and grate them, using the leaf end as a handle.
  7. Finely chop the fresh parsley or your preferred herb.
  8. Toss the grated carrots and parsley with the vinaigrette in the bowl.

This salad can be stored in the fridge for up to 5 days.
For special events, prepare the salad 24 to 48 hours in advance.
