- 1 pound carrots, peeled and grated (5-6 medium carrots)
- 1 teaspoon lemon zest, from 1 lemon
- 1/4 cup lemon juice, freshly squeezed (1 large lemon)
- 1 tablespoon dijon mustard
- 1 tablespoon honey
- 1 teaspoon kosher salt (use less salt if all you have is table salt)
- 1/4 teaspoon black pepper, freshly cracked
- 1/4 cup olive oil, high quality
- 2 tablespoons fresh parsley, finely chopped
Instructions
- In a medium bowl, zest the lemon until you have about 1 teaspoon of zest.
- Juice the lemon into the same bowl, needing 1/4 cup of lemon juice. Use 2 lemons if small.
- Add dijon mustard, honey, kosher salt, and black pepper to the bowl.
- Whisk all ingredients together until combined.
- While whisking, slowly drizzle in high quality olive oil to emulsify the dressing.
- Peel the carrots and grate them, using the leaf end as a handle.
- Finely chop the fresh parsley or your preferred herb.
- Toss the grated carrots and parsley with the vinaigrette in the bowl.
