Ingredients

  • 1 cup fresh basil
  • 2 tbsp salted butter
  • 2 garlic cloves
  • Salt and pepper to taste
  • 1 package penne
  • 2 cups cleaned, blanched shrimp
  • ½ cup grated parmesan or pecorino romano cheese
  • 2 tbsp salted butter
  • 1 ½ tbsp olive oil for shrimp
  • 1 garlic clove minced
  • ¼ cup light beer
  • juice from half a lemon approx. 1 tbsp
  • 2 tsp black and white sesame seeds
  • 1 tsp oregano
  • 1 tsp smoked paprika
  • 1 tbsp olive oil for cooking pasta
  • optional: 1 tsp chili paprika
  • Salt and pepper to taste


Instructions

  1. Combine the basil, 2 tbsp butter, 2 garlic cloves, salt, and pepper in a blender.
  2. Blend until smooth and refrigerate while preparing the other ingredients.
  3. Bring a pot of water to a boil and add the pasta and 1 tbsp olive oil.
  4. Cook the pasta according to package directions until al dente.
  5. Heat a pan over medium heat, melt 2 tbsp butter and 1 ½ tbsp olive oil.
  6. Add the shrimp and minced garlic, cooking for 7-8 minutes.
  7. Stir in spices: smoked paprika, oregano, and black pepper (add chili paprika if using) and cook for an additional 4-5 minutes.
  8. Pour in the beer and 1 tbsp lemon juice, simmering until the liquid reduces slightly.
  9. Drain the cooked pasta well.
  10. In the pot, mix the drained pasta with the chilled garlic-basil butter until coated.
  11. Gently fold in the shrimp mixture.
  12. Serve on plates with parmesan cheese, sesame seeds, and a squeeze of fresh lemon juice.

Notes

For extra flavor, consider adding red pepper flakes to the shrimp mixture.
Make sure to use fresh basil for the best taste.
Serve with a side salad for a complete meal.
