Description

Ingredients

  • Unsalted Butter (1/2 cup)
  • White Sugar (1/2 cup)
  • Brown Sugar (1/2 cup)
  • Eggs (2)
  • Half & Half (1/4 cup)
  • Orange Juice (1/4 cup)
  • Vanilla Extract (1 teaspoon)
  • Orange Zest (1 tablespoon)
  • Gluten Free All Purpose Baking Flour (2 cups)
  • Baking Soda (1 teaspoon)
  • Salt (1/2 teaspoon)
  • Fresh Cranberries (1 1/4 cup)
  • Powdered Sugar (3/4 cup)
  • Orange Juice (1-2 tablespoons)
  • Orange Zest (1 teaspoon)


Instructions

  • Preheat oven to 350°F (175°C) and grease a loaf pan.
  • Combine melted butter, white and brown sugars, eggs, half & half, orange juice, and vanilla in a bowl.
  • In another bowl, whisk gluten free flour, baking soda, and salt. Mix with wet ingredients until just combined.
  • Fold in cranberries gently, pour batter into the pan, and smooth the top.
  • Bake for 60-65 minutes until a toothpick comes out clean.
  • Cool for 15 minutes, then transfer to a rack and drizzle with glaze before serving.

Notes

For dairy-free, substitute butter with coconut oil and half & half with almond milk.
Add a sprinkle of cinnamon for enhanced flavor.
Ensure eggs are at room temperature for best mixing results.
