- Unsalted Butter (1/2 cup)
- White Sugar (1/2 cup)
- Brown Sugar (1/2 cup)
- Eggs (2)
- Half & Half (1/4 cup)
- Orange Juice (1/4 cup)
- Vanilla Extract (1 teaspoon)
- Orange Zest (1 tablespoon)
- Gluten Free All Purpose Baking Flour (2 cups)
- Baking Soda (1 teaspoon)
- Salt (1/2 teaspoon)
- Fresh Cranberries (1 1/4 cup)
- Powdered Sugar (3/4 cup)
- Orange Juice (1-2 tablespoons)
- Orange Zest (1 teaspoon)
Instructions
- Preheat oven to 350°F (175°C) and grease a loaf pan.
- Combine melted butter, white and brown sugars, eggs, half & half, orange juice, and vanilla in a bowl.
- In another bowl, whisk gluten free flour, baking soda, and salt. Mix with wet ingredients until just combined.
- Fold in cranberries gently, pour batter into the pan, and smooth the top.
- Bake for 60-65 minutes until a toothpick comes out clean.
- Cool for 15 minutes, then transfer to a rack and drizzle with glaze before serving.
Notes
For dairy-free, substitute butter with coconut oil and half & half with almond milk.
Add a sprinkle of cinnamon for enhanced flavor.
