Description

Gooey Butter Cake dazzles with its rich flavors and simple preparation. Made with cream cheese, butter, and a yellow cake mix, this dessert is perfect for gatherings or a cozy treat at home.

Ingredients

Scale
  • 1 box yellow cake mix
  • 4 large eggs divided, room temp
  • ½ cup (113 g) butter melted
  • 3½ cups (420 g) confectioners' sugar
  • 8 oz (227 g) full-fat cream cheese softened
  • 1 tsp (5 ml) butter extract
  • more confectioners' sugar (optional) for dusting

Instructions

  • Preheat the oven to 350°F (177°C). Line a 9×13-inch baking dish with parchment paper, leaving an overhang on two sides for easy removal, or lightly grease the pan.
  • In a large mixing bowl, combine the yellow cake mix, 2 of the eggs, and melted butter. Mix with a hand mixer on medium speed until fully combined and thick. Press the mixture evenly into the bottom of the baking dish.
  • In a separate bowl, add the confectioners’ sugar, softened cream cheese, remaining 2 eggs, and butter extract. Mix until smooth using the hand mixer, scraping the sides as needed.
  • Pour the cream cheese mixture over the cake base, spreading it gently to the edges.
  • Bake for 35 to 40 minutes until the top is lightly golden and a toothpick inserted near the center comes out clean. Remove closer to 35 minutes for a gooier center or 40 minutes for a firmer texture.
  • Let the cake cool completely before slicing into squares and dust with confectioners’ sugar just before serving.

Notes

Ensure that all ingredients are at room temperature for better mixing.
For a richer flavor, you can use unsalted butter instead of regular butter.
Adjust the baking time according to your preferred cake texture.
