Description
These granola bars are packed with flavor and made simply with peanut butter, oats, and honey. Perfect for a quick snack or a healthy meal option, they’re easy to prepare and can be customized with your favorite mix-ins.
Ingredients
Scale
- 1 ¾ cups old-fashioned rolled oats (certified gluten-free, if needed)
- ¼ cup hemp hearts (or any add-in; see notes)
- ½ cup all-natural peanut butter
- ½ cup honey (or maple syrup)
- ½ teaspoon fine sea salt
- ¼ cup dark chocolate chips (melted; optional topping)
Instructions
- In a large bowl, combine oats, hemp hearts (or your preferred mix-in), and salt. Set aside.
- Lightly grease an 8-inch square pan with cooking spray and line the bottom with parchment paper.
- In a small saucepan over medium-high heat, boil the honey without stirring for 1 minute once bubbles appear.
- Remove from heat and stir in peanut butter until smooth. Pour this mixture over the oats.
- Quickly combine the oats with the peanut butter mixture using a spatula, stirring until evenly coated.
- Press the mixture firmly into the prepared pan. Place the pan in the fridge or freezer to cool for about 10 minutes.
- Once firm, lift the bars out of the pan using parchment paper and slice into 12 pieces.
- Optionally, drizzle melted chocolate on top and let it harden before serving.
Notes
For added flavor, consider mixing in dried fruits or nuts.
