- 1½ to 2 pounds boneless skinless chicken breasts or thighs
- ¼ cup olive oil
- 2 tablespoons fresh lemon juice
- 1 tablespoon low-sodium soy sauce
- 3 cloves garlic, minced
- 1½ teaspoons fine sea salt
- 1 teaspoon freshly cracked black pepper
- 1 teaspoon smoked paprika
- 1 teaspoon onion powder
- 1 teaspoon honey
Instructions
- Prep the chicken by pounding it to an even thickness (about ¾-inch thick) and pat it dry with paper towels.
- In a medium bowl or jar, whisk together the olive oil, lemon juice, soy sauce, garlic, salt, pepper, smoked paprika, onion powder, and honey to make the marinade.
- Place the chicken in a large bowl or zip-top bag and pour the marinade over it. Toss until coated, cover, and refrigerate for 30 minutes to 2 hours.
- Preheat the grill or grill pan to medium-high heat and lightly oil the grates.
- Remove the chicken from the marinade, letting excess drip off. Grill for 5–7 minutes per side until slightly charred and the internal temperature reaches 165°F.
- Transfer the chicken to a clean plate and rest for 5 minutes before slicing to retain its juiciness.
- Slice the chicken and serve warm with your favorite sides or use in salads, wraps, or tacos.
Notes
For best results, marinate the chicken for at least 1 hour.
Adjust cooking time based on the thickness of the chicken pieces.
