Description

Enjoy the delightful combination of ham, broccoli, and cheddar cheese stuffed into fluffy baked potatoes. This simple yet flavorful dish makes a perfect quick dinner or comfort food for any night of the week.


Ingredients

  • 4 russet potatoes medium to large
  • 2 tablespoons olive oil
  • ¼ cup butter melted
  • 1 tablespoon kosher salt plus more for if salting potatoes before baking
  • 1 tablespoon black pepper
  • 1 ½ cups petit jean meats ham diced
  • 1 ½ cups broccoli fresh or frozen
  • 1 ½ cups cheddar cheese shredded


Instructions

  1. Preheat the oven to 400°F and line a baking sheet with parchment paper.
  2. Scrub the potatoes clean, pat them dry, and make a 1/8 inch slit down the length of each potato or prick them with a fork. Rub them with olive oil and sprinkle with salt.
  3. Bake the potatoes at 400°F for 50 to 60 minutes or until they are fork-tender.
  4. Prepare the broccoli by thawing frozen broccoli under cool water and draining well, or steaming fresh broccoli.
  5. Slice each potato open and gently fluff the insides with a fork. Add melted butter, salt, and pepper.
  6. Top each potato with the prepared broccoli, diced ham, and shredded cheddar cheese.
  7. Return the potatoes to the oven for 15 minutes or until the cheese is melted and bubbly and the broccoli is heated through.
  8. Serve the potatoes immediately.

Notes

For a lower salt intake, consider skipping the added salt when rubbing the potatoes with olive oil.
If you prefer, you can use pre-cooked ham for convenience.
