Description

This Hoagie Sub Pasta Salad brings together the flavors of classic hoagie ingredients in a delightful and vibrant dish. Featuring tri colored rotini, fresh veggies, and a mix of meats and cheeses, it’s a perfect choice for a quick dinner or a crowd-pleasing potluck option. Simple to prepare and bursting with flavor, it’s ideal for those seeking easy, homemade meals.


Ingredients

  • 1 pound of tri colored rotini, cooked to box directions and drained
  • 1 cucumber, peeled and sliced
  • 1 green bell pepper, diced
  • 1 red bell pepper, diced
  • 1 cup cherry tomatoes, sliced
  • 1 small red onion, diced
  • 2 cups fresh spinach, chopped
  • 1 cup sweet and hot salad peppers
  • ¼ pound deli ham, diced
  • ¼ pound salami, diced
  • 1 cup pepperoni, diced
  • ½ pound provolone cheese, diced
  • 1 cup mayonnaise
  • 16 ounce bottle Italian dressing
  • 1 teaspoon Italian seasoning
  • ½ teaspoon black pepper
  • ¼ cup grated parmesan cheese
  • parsley, optional


Instructions

  1. In a large bowl, combine the cooked pasta, cucumber, green bell pepper, red bell pepper, tomatoes, onion, spinach, salad peppers, salami, pepperoni, ham, and provolone cheese.
  2. In a smaller bowl, mix together the mayonnaise, Italian dressing, Italian seasoning, black pepper, and grated parmesan cheese.
  3. Pour the dressing over the pasta and vegetable mixture and toss to combine thoroughly.
  4. Cover and chill in the refrigerator for 4 hours before serving.
  5. Garnish with parsley if desired.

Notes

Feel free to add or substitute other vegetables based on personal preference.
This salad can be made a day in advance for even better flavor.
