Ingredients

  • 2 cups warm water, about 105°f
  • 1 tablespoon active dry yeast
  • 2 ½ teaspoons granulated sugar
  • 5 cups (650 g) all-purpose flour, or bread flour (add more as needed)
  • 2 ½ teaspoons table salt or fine sea salt
  • 1 teaspoon olive oil


Instructions

  1. In a small bowl, mix 2 cups warm water, 1 tablespoon yeast, and 2 ½ teaspoons sugar. Allow it to sit for 5 minutes until foamy.
  2. In a stand mixer with a paddle attachment or a large bowl, combine 2 cups of flour and 2 ½ teaspoons salt. Add the yeast mixture and mix on medium-low or stir by hand.
  3. Gradually knead in ½ cup of the remaining flour until the dough becomes smooth but not sticky, adjusting flour as needed.
  4. Rub olive oil over the dough ball, cover with a towel, and let it rise for 15 to 30 minutes, or up to 1 hour if time permits.
  5. Transfer the dough to a floured surface, dividing it into 8 equal balls. Flatten each ball into a rectangle, then roll into a cylinder starting from the long side.
  6. Pinch the seams closed and round the edges. Place each shaped loaf on a baking sheet and cover lightly with a towel to rise for 30 to 60 minutes.
  7. Make three diagonal cuts across the top of each loaf and brush with an egg wash.
  8. Preheat oven to 375°F. Line a baking sheet with parchment paper or a silicone mat. Bake for 15 to 20 minutes until golden brown.
  9. Optional: Brush the tops with melted butter. Slice the rolls and serve with your favorite sandwich fillings.

Notes

For best results, allow the rolls to rise longer if possible for better texture.
Adjust flour based on humidity and dough consistency during kneading.
