Ingredients

  • 2 tablespoons olive oil
  • 1 medium yellow onion (finely chopped)
  • 4 cloves garlic (minced)
  • 2 tablespoons tomato paste
  • 1 can (28-ounce) whole San Marzano tomatoes (do not drain)
  • 1 teaspoon sugar (optional)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • ½ teaspoon red pepper flakes (optional, for heat)
  • ½ teaspoon salt (or to taste)
  • ¼ teaspoon black pepper


Instructions

  • Heat olive oil in a large saucepan over medium heat.
  • Add chopped onion and sauté until soft and translucent for about 5–7 minutes.
  • Stir in minced garlic and sauté briefly until fragrant.
  • Incorporate tomato paste and cook for another minute.
  • Add whole San Marzano tomatoes, sugar, oregano, basil, red pepper flakes, salt, and pepper; simmer for 20-30 minutes.
  • Adjust taste and texture as preferred, blending if a smoother consistency is desired.

Notes

Store cooled marinara in an airtight container in the fridge for up to 5 days.
Can be frozen in freezer-safe containers for up to 3 months.
For the best flavor, prepare the sauce a day in advance.
