Ingredients

  • ⅔ cup honey
  • ⅓ cup low sodium chicken broth
  • 2 tablespoons low sodium soy sauce
  • 2 tablespoons minced garlic
  • 1 tablespoon corn starch
  • 2 tablespoons cider vinegar
  • ¼ teaspoon salt
  • 1 pinch red pepper flakes (optional)
  • 2 boneless skinless chicken breasts (about one pound)
  • ¼ cup corn starch
  • salt and pepper
  • 2 tablespoons canola oil


Instructions

  1. In a bowl, whisk together honey, chicken broth, soy sauce, garlic, 1 tablespoon corn starch, vinegar, salt, and red pepper flakes if desired. Set aside.
  2. Slice the chicken breasts in half lengthwise, creating thinner pieces.
  3. Spread ¼ cup corn starch on a shallow dish and season with salt and pepper. Coat both sides of the chicken in corn starch, shaking off the excess.
  4. Heat canola oil in a large skillet over medium-high heat. Cook the chicken for 2-3 minutes on each side until beginning to brown. You may need to do this in batches.
  5. Remove the chicken from the skillet, then pour in the sauce, scraping any browned bits from the bottom of the pan.
  6. Return the chicken to the pan, stirring frequently until the sauce thickens and the chicken is cooked through, about 5 minutes. Ensure the thickest part of the chicken reaches 165°F.
  7. Serve the chicken hot.

Notes

For extra heat, feel free to add more red pepper flakes.
This dish pairs well with steamed vegetables or rice.
Make sure not to overcrowd the pan while cooking the chicken for even browning.
