  • 4-6 pork chops boneless or bone-in – about 1 inch thick
  • 1/2 teaspoon kosher salt or to taste
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1/4 teaspoon ground white pepper
  • 2 tablespoons brown sugar
  • 1 tablespoon mustard seeds
  • 1 tablespoon all-purpose flour
  • 3 tablespoons unsalted butter
  • 6 cloves garlic minced
  • 1 1/2 cup chicken broth
  • 1/4 cup honey or maple syrup if allergic
  • 2 tablespoons apple cider vinegar


Instructions

  1. Combine the dry rub ingredients in a small bowl: salt, chili powder, smoked paprika, onion powder, garlic powder, white pepper, brown sugar, and all-purpose flour.
  2. Pat dry the pork chops and coat them with the dry rub, ensuring even coverage.
  3. Using the Instant Pot, set it to sauté and heat up. Add the butter until melted.
  4. Sear the pork chops in the melted butter for about 2-3 minutes per side until browned. Set the pork aside.
  5. Add minced garlic and mustard seeds to the pot, cooking for about 30 seconds while stirring.
  6. Sprinkle in 2 tablespoons of flour, stirring well and cooking for 1 minute until slightly browned.
  7. Pour in the chicken broth, scraping the bottom of the pot to release any browned bits.
  8. Stir in the honey and apple cider vinegar, adjusting salt and pepper to taste.
  9. Return the seared pork chops to the pot. Seal the Instant Pot lid and set it to cook on HIGH pressure for 2 minutes.
  10. For frozen pork chops, skip the browning step and cook on HIGH pressure for 7 minutes.
  11. After cooking, allow the pressure to release naturally for 5 minutes, then quickly release the remaining pressure.
  12. Carefully remove the pork chops and place them on a plate, covering them with foil.
  13. For a thicker sauce, use the sauté setting again. Combine 1 tablespoon of cornstarch with 2 tablespoons of water. Stir this slurry into the sauce and cook for about 5 minutes, stirring until thickened.
  14. Serve the pork chops drizzled with the honey garlic sauce and garnish with freshly chopped parsley.

Notes

For extra flavor, let the pork marinate in the rub for an hour before cooking.
