Description

  • 2 tbsp olive oil
  • 4-5 garlic cloves, minced
  • 1 tbsp chopped fresh sage leaves (or 1 tsp dried)
  • 1 tbsp chopped fresh thyme leaves (or 1 tsp dried)
  • 1 tbsp chopped fresh rosemary leaves (or 1 tsp dried)
  • 1 tsp kosher salt
  • 1/2 tsp freshly ground black pepper
  • 1/3 cup pure maple syrup
  • 2 tbsp mustard
  • 2 tbsp Worcestershire sauce
  • 2 tbsp light-sodium soy sauce or coconut aminos
  • Pomegranate seeds (for garnish)
  • Additional garlic cloves (to roast alongside the turkey)
  • Cranberries (optional)
  • Fresh herbs (for garnish)


Instructions

  • Preheat your oven to 350°F (175°C) and let the turkey reach room temperature.
  • Mix olive oil, garlic, sage, thyme, rosemary, salt, and pepper to create an herb rub.
  • Rub the mixture over the turkey breast evenly for maximum flavor.
  • Place the turkey in a roasting pan and roast for about an hour, turning halfway.
  • Prepare the glaze by mixing maple syrup, mustard, Worcestershire sauce, and soy sauce in a jug.
  • After 30 minutes, brush half of the glaze over the turkey.
  • After another 15 minutes, add the remaining glaze and continue roasting until the turkey reaches 165°F (74°C).
  • Let the turkey rest for 10 minutes before slicing, then garnish as desired and serve.

Allow the turkey to rest after cooking to ensure juiciness.
Using a meat thermometer helps prevent overcooking and guarantees perfect results.
