- 1 ¼ cup half and half
- 2 ½ cups chicken broth
- ½ chicken bouillon cube
- 2 teaspoons honey
- 1 teaspoon hot sauce
- 1 teaspoon dijon mustard
- ¾ teaspoons dried oregano
- ¾ teaspoons dried basil
- ¾ teaspoons dried parsley
- ¾ teaspoons onion powder
- 1 lb. boneless skinless chicken breast
- Salt and pepper, to taste
- ½ cup dry white wine
- 3 tablespoons butter
- 3 cloves garlic, minced
- 3 tablespoons tomato paste
- 1/3 cup sun-dried tomatoes, oil reserved
- 1 cup orzo, uncooked
- ½ cup parmesan cheese, freshly grated
- ¼ cup cream cheese, softened
- 2 cups packed baby spinach, roughly chopped
Instructions
- Combine the sauce ingredients in a large measuring cup and set aside. Pat the sun-dried tomatoes dry and roughly chop them. Measure out the remaining ingredients.
- Slice the chicken breast in half lengthwise to create thinner slices. Cover with plastic wrap and use a meat mallet to tenderize. Cut into pieces, season with salt and pepper.
- Heat 1 to 2 tablespoons of reserved oil from the sun-dried tomatoes in a large skillet over medium-high heat. Add the chicken and sear until golden brown, about 5 to 7 minutes. Remove and set aside.
- Pour the wine into the same skillet and clean the bottom with a spatula. Simmer until reduced by half, about 3 to 4 minutes.
- Add the butter and garlic, cooking for 1 minute. Stir in the tomato paste and cook for 2 more minutes.
- Gradually add the prepared sauce mixture while stirring continuously. The orzo will absorb the liquid as it cooks.
- Add the chopped sun-dried tomatoes and bring to a gentle boil, reducing heat if necessary.
- Stir in the orzo and return to a gentle boil. Cook uncovered, stirring frequently for around 9 minutes, ensuring the pasta doesn’t settle.
- Reduce heat to low. Mix in the cream cheese and slowly add the parmesan cheese, stirring until melted. Add the spinach and heat through for 1 minute.
- Return the chicken and any juices to the skillet, combine well and heat through. The sauce will thicken upon standing. Serve once at desired consistency.
Notes
For added flavor, consider marinating the chicken in a blend of seasoning overnight.
Feel free to substitute the orzo with another small pasta of your choice.
