Description

These mini meatloaves are packed with flavor and are incredibly easy to prepare. With ground beef, fresh veggies, and gooey cheese, they make a delightful quick dinner or a comforting meal any day!


Ingredients

  • 1 lb ground beef (80% lean)
  • ½ cup breadcrumbs
  • ¼ cup finely chopped onion
  • ¼ cup finely chopped green bell pepper (optional)
  • ¼ cup milk
  • 1 large egg
  • 2 cloves garlic, minced
  • 1 teaspoon worcestershire sauce
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 4 slices of cheese (mozzarella or cheddar), cut into small squares
  • ½ cup ketchup
  • 2 tablespoons brown sugar
  • 1 tablespoon dijon mustard (optional)
  • fresh parsley, chopped (for garnish)


Instructions

  • Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper or grease a mini muffin tin.
  • In a mixing bowl, combine ground beef, breadcrumbs, chopped onion, green bell pepper (if using), milk, egg, minced garlic, Worcestershire sauce, salt, and pepper. Mix gently until just combined.
  • Divide the mixture into 8 portions, flatten into patties, place a piece of cheese in the center, and wrap the meat around the cheese, sealing well.
  • Arrange the mini meatloaves on the prepared sheet or muffin tin. Mix ketchup, brown sugar, and Dijon mustard in a small bowl and spread over each.
  • Bake for 25-30 minutes until the internal temperature reaches 160°F (71°C) and the glaze is bubbly. Let rest for 5 minutes after baking.
  • Garnish with chopped parsley and serve warm.

Notes

You can add other vegetables like grated carrot for extra nutrition.
Customize the glaze by adding hot sauce for a spicy kick.
For a healthier option, use turkey or chicken instead of beef.
