- 2 (8 oz) cream cheese, softened
- 1/2 cup sugar
- 2 eggs
- 1 tsp vanilla
- red food coloring
- whipped cream, optional
- valentine sprinkles, optional
- 1 cup oreo crumbs
- 2 1/2 tbsp butter, melted
Instructions
- Preheat the oven to 350 degrees and line a cupcake pan with liners.
- In a food processor, pulse about 10-11 Oreos into crumbs, then mix in melted butter until combined.
- Evenly distribute the crumb mixture into each liner and press down firmly.
- In a medium bowl, beat the softened cream cheese and sugar until smooth, then beat in the eggs and vanilla.
- Add red food coloring to achieve the desired pink hue.
- Spoon about 1/4 cup of the mixture into each cup, filling evenly.
- Bake for 15-17 minutes, until the centers are slightly jiggly.
- Remove from the oven and allow to cool completely in the pan, then refrigerate until firm.
- Top with whipped cream and sprinkles if desired.
Notes
