Description

These Mint Brownies are a delightful dessert featuring rich chocolate flavors, buttery frosting, and a refreshing minty twist. Perfect for any occasion, they combine creamy textures with a crunchy Oreo surprise, making them a must-try for dessert enthusiasts.


Ingredients

  • 1 cup + 2 tbsp chocolate chips
  • 2/3 cup heavy cream
  • 1 tbsp butter
  • 3 oz cream cheese, softened
  • 4 tbsp butter, softened
  • 1 tsp peppermint extract
  • 2 cups powdered sugar
  • green food coloring
  • 1 box brownie mix + ingredients on the box
  • 6 oreo's, finely chopped


Instructions

  • Preheat your oven to 350 degrees and line a 9 x 9 pan with parchment paper.
  • Prepare the brownie mix according to the instructions on the box, adding finely chopped Oreos to the brownie batter.
  • Pour the batter into the lined pan and bake according to the time suggested on the box.
  • Once baked, remove the brownies from the oven and let them cool for 5 minutes. Then place them in the freezer while you prepare the frosting.
  • For the frosting, beat together the softened cream cheese and butter until creamy.
  • Add peppermint extract and green food coloring to the cream mixture and mix well.
  • Incorporate powdered sugar, beating until the frosting is smooth and creamy.
  • Spread the frosting over the cooled brownies and return them to the freezer while you prepare the ganache.
  • To make the ganache, place chocolate chips in a bowl. In another bowl, melt heavy cream and butter in the microwave for 60 seconds.
  • Stir the melted mixture and pour it over the chocolate chips. Cover the bowl and let it sit for 5 minutes.
  • After 5 minutes, whisk the mixture until a ganache forms.
  • Allow the ganache to thicken for 10-15 minutes. Then, take the brownies from the freezer and pour the ganache over the frosting layer.
  • Let the brownies sit at room temperature for 30 minutes before refrigerating for 2-3 hours before cutting and serving.

Notes

For a stronger mint flavor, increase the peppermint extract to taste.
Make sure the brownies are completely cooled before frosting to prevent melting.
These brownies store well in the refrigerator for up to a week.
