These M&M Cookie Bars are a delightful treat with a soft and chewy texture, loaded with mini chocolate chips and colorful M&Ms. Perfect for any occasion, they’re easy to make and guaranteed to satisfy your sweet tooth!

- 2 sticks unsalted butter, softened
- 1 cup granulated sugar
- 1 cup packed light brown sugar
- 2 large eggs
- 1 teaspoon pure vanilla extract
- 2 cups all-purpose flour
- 3.4 ounce box instant vanilla pudding mix
- 1 teaspoon baking soda
- 1 teaspoon kosher salt
- 1 1/2 cup mini chocolate chips
- 1 1/2 cups mini M&Ms
Instructions
- Preheat the oven to 350 degrees F and line a 9 x 13 inch baking dish with parchment paper.
- In a large mixing bowl, cream together the softened butter and both sugars until well combined.
- Add the eggs and vanilla extract, mixing until incorporated.
- Stir in the all-purpose flour, instant pudding mix, baking soda, and kosher salt until combined.
- Fold in the mini chocolate chips and mini M&Ms.
- Transfer the dough to the prepared baking dish, pressing it evenly into the pan.
- Top the dough with additional M&Ms, pressing them slightly into the mixture.
- Bake for 28-35 minutes, or until the bars are golden brown and set in the middle.
- Remove from the oven and let cool for an hour before cutting into squares. Serve at room temperature.
Notes
For a richer flavor, use dark brown sugar instead of light brown sugar.
Store leftovers in an airtight container for up to a week.
Feel free to substitute other candies for M&Ms for a fun twist.
