- 5 cups all-purpose flour, sifted
- 2 large eggs, lightly beaten
- 2 tbsp. butter, room temperature; plus more to sprinkle
- 2 tbsp. sugar plus 1 tsp.
- 1 ½ tsp. kosher salt
- 2 ¼ tsp. instant yeast or 1 packet
- 1 ¼ cup lukewarm milk
Instructions
- In a stand mixing bowl, mix lukewarm milk (about 110-115℉), 1 teaspoon sugar, and yeast. Let it rest for 5–10 minutes until foamy.
- Add the remaining sugar, eggs, butter, and salt to the bowl. Mix gently until combined with the dough hook.
- Gradually incorporate the sifted flour until a soft dough forms. It should be smooth and slightly tacky, not sticky.
- Knead the dough for 8–10 minutes until it is elastic and soft.
- Place the dough in a lightly greased bowl. Cover it with a clean kitchen towel and let it rise in a warm spot for 1–1½ hours, or until it doubles in size.
- Gently punch down the dough and divide it into equal portions, rolling each piece into an oval or circle about ¼ inch thick.
- Heat a heavy skillet or cast-iron pan over medium-high heat and place one piece of dough in the hot pan. Cook for 1–2 minutes until bubbles form and the bottom is golden.
- Flip and cook the other side until lightly charred and cooked through.
- Brush each piece with melted butter while still warm, then stack and cover with a towel to keep soft.
Notes
Ensure the milk is lukewarm to properly activate the yeast.
You can use a nonstick pan for cooking if a cast-iron pan is not available.
For extra flavor, try adding minced garlic or herbs to the butter before brushing.
