Description

These No Chill Chocolate Chip Cookies are a quick and simple treat that combines buttery flavor with gooey chocolate chunks. Perfect for satisfying cravings in no time!


Ingredients

  • 1 cup all-purpose flour
  • ¾ cup bread flour
  • ½ teaspoon baking soda
  • ¼ teaspoon baking powder
  • ½ teaspoon kosher salt
  • ½ cup unsalted butter, cool room temperature
  • ¾ cup packed brown sugar
  • ¼ cup granulated sugar
  • 1 large egg , plus 1 egg yolk
  • 1½ teaspoons vanilla extract
  • 1¾ cups chocolate chips or chunks, if possible, please use chunks


Instructions

  1. Preheat the oven to 400°F.
  2. In a medium bowl, whisk together the all-purpose flour, bread flour, baking soda, baking powder, and salt. Set aside.
  3. In a mixing bowl, cream the butter, brown sugar, and granulated sugar for no more than 20–30 seconds. Do not whip until fluffy; the mixture should remain dense.
  4. Add the egg, egg yolk, and vanilla. Mix only until just combined, about 10–15 seconds. Do not overmix.
  5. Add the dry ingredients to the wet ingredients and mix until just incorporated. The dough should be thick.
  6. Fold in the chocolate chips or chunks.
  7. Scoop the dough into tall mounds, about 2–3 tablespoons each. Form them higher rather than wider to encourage a gooey center.
  8. Bake for 8–9 minutes, or until the edges are just set and the centers still look glossy and slightly underdone.
  9. Let the cookies rest on the baking sheet for 5 minutes to allow the centers to set into a gooey texture.

Notes

For best results, use a combination of chocolate chips and chunks for a blend of textures.
If you prefer chewier cookies, aim to slightly underbake them.
Store any leftover cookies in an airtight container at room temperature.
