Description
This Pasta Salad is packed with flavor from cherry tomatoes, provolone cheese, and salami. It’s an easy-to-make dish, great for gatherings or a quick weeknight meal.

- 12 oz. uncooked rotini pasta
- 2 tablespoons extra-virgin olive oil
- 1 cup halved cherry tomatoes
- 2/3 cup diced green pepper
- 1/3 cup diced red onion
- 1/2 cup cubed provolone (1/4-inch cubes)
- 1 cup cubed hard salami (1/4-inch cubes)
- 1/2 cup pitted black or kalamata olives
- grated parmesan cheese, for serving
- 1/3 cup red wine vinegar
- 2 teaspoons freshly squeezed lemon juice
- 2 teaspoons dried oregano
- 1 1/2 teaspoons minced garlic
- 1 teaspoon sugar
- 1/2 cup extra-virgin olive oil
Instructions
- Bring a large pot of salted water to a boil. Add the pasta and cook until al dente, about 10 minutes.
- Drain the pasta and place it in a large bowl. Drizzle with olive oil and sprinkle with salt and pepper, then toss to combine.
- Preheat the air fryer to 400°F.
- Put the pasta in the air fryer and cook for 20 minutes, shaking the basket every 5 minutes to prevent sticking.
- Remove the pasta from the air fryer and let it cool.
- In a large bowl, mix together cherry tomatoes, green peppers, red onion, provolone cheese, salami, and olives.
Notes
Feel free to customize with your favorite vegetables or cheese.
For a vegetarian option, omit the salami and add more veggies.
