Description

These Peanut Butter Ritz Crackers are simply irresistible, offering a delightful crunch, creamy peanut butter filling, and a sweet chocolate coating. Quick to prepare and great for festive occasions, these treats will satisfy your sweet tooth.


Ingredients

  • 32 ritz crackers about a sleeve and a half
  • ½ cup peanut butter
  • 11 ounce bag white chocolate chips
  • 1 tablespoon vegetable oil
  • 2 tablespoons sprinkles – holiday or any festive type sprinkles


Instructions

  • Line a cookie sheet with wax or parchment paper. Place 16 Ritz crackers on the sheet.
  • Spread about 1 teaspoon of peanut butter on one side of each cracker.
  • Top with a second cracker to form a sandwich. Place in the freezer or refrigerator until ready to dip.
  • In a medium-sized bowl, combine white chocolate chips and vegetable oil. Melt in a microwave-safe bowl in 30-second intervals, stirring after each interval until completely melted, about 1 minute 30-45 seconds.
  • Dip each peanut butter sandwich into the melted chocolate, using a fork to shake off any excess chocolate. Place on the parchment-lined baking sheet and sprinkle with festive sprinkles.
  • Refrigerate until the chocolate hardens. Once set, stack in an airtight container, and serve cold for best flavor.

Notes

For added flavor, try adding a pinch of salt to the peanut butter before spreading.
Feel free to replace white chocolate chips with dark chocolate chips for a different taste.
Store the cookies in the refrigerator to keep them fresh and delicious.
