Description

These Peeps Bunny Sugar Cookies are a fun and tasty treat, made with butter, sugar, and almond extract. Perfect for any celebration and easy to make!


Ingredients

  • 1 cup salted butter softened
  • ½ cup shortening
  • 1 ½ cup sugar
  • 1 large egg
  • 1 ½ teaspoon vanilla
  • 2 teaspoon almond extract
  • 4 cup all purpose flour
  • ½ cup corn starch
  • 2 teaspoon baking powder
  • 1 cup butter softened
  • 6 cups powdered sugar
  • 2 teaspoons vanilla extract
  • 6-8 tablespoons milk
  • sugar sprinkles in a variety of colors
  • black sugar pearls


Instructions

  1. Preheat your oven to 325 degrees.
  2. In a large mixing bowl, cream together the softened butter, shortening, and sugar until fluffy using an electric mixer or stand mixer.
  3. Lower the mixer speed and add the egg, vanilla, and almond extract. Incorporate the baking powder.
  4. Gradually mix in the flour and cornstarch. Start with 3 ½ cups of flour; if the dough is too soft, add the remaining ½ cup. If too dry, add a bit of water.
  5. Lightly flour your work surface and shape the dough into a large ball, then press it into a disk.
  6. Roll the dough out to your desired thickness (about ¼-1/2 inch) and cut it into shapes. Add more flour if the dough is sticky, but aim for a soft texture.
  7. Use a spatula to carefully transfer the cookie shapes to a baking sheet lined with parchment paper.
  8. Bake for 9-10 minutes. The cookies will remain soft. Allow them to sit on the baking sheet for 5 minutes before moving them to a wire rack to cool completely before frosting.

Notes

Ensure butter is softened for easy mixing.
Adjust thickness of cookies based on personal preference.
Use different colored sprinkles for a festive look.
