Description

Penne alla Vodka is a comforting dish featuring rich flavors from vodka and creamy sauce. This easy recipe requires minimal prep, perfect for weeknight dinners.


Ingredients

  • 12 ounces penne pasta uncooked
  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • ½ cup vodka
  • ¼ cup tomato paste
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ¾ cup heavy whipping cream
  • Fresh basil thinly sliced
  • ½ cup fresh grated parmesan cheese


Instructions

  1. Cook penne pasta according to package instructions. Reserve some pasta water, then drain.
  2. In a large skillet, heat olive oil and butter over medium heat. Add finely chopped onion and sauté until soft.
  3. Stir in minced garlic and cook for 1 minute.
  4. Add vodka and simmer for 2-3 minutes.
  5. Mix in tomato paste, dried oregano, dried basil, salt, and black pepper.
  6. Lower the heat and stir in heavy whipping cream until smooth.
  7. Add the cooked penne pasta and toss to coat in the sauce, using reserved pasta water to thin if needed.
  8. Stir in grated parmesan cheese until melted and serve hot.

Notes

For a vegetarian option, ensure the pasta is egg-free.
Adjust the quantity of vodka for a milder flavor, or substitute with broth.
