- 12 ounces penne pasta uncooked
- 1 tablespoon olive oil
- 2 tablespoons butter
- 1 small onion finely chopped
- 2 cloves garlic minced
- ½ cup vodka
- ¼ cup tomato paste
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- ½ teaspoon salt
- ½ teaspoon black pepper
- ¾ cup heavy whipping cream
- Fresh basil thinly sliced
- ½ cup fresh grated parmesan cheese
Instructions
- Cook penne pasta according to package instructions. Reserve some pasta water, then drain.
- In a large skillet, heat olive oil and butter over medium heat. Add finely chopped onion and sauté until soft.
- Stir in minced garlic and cook for 1 minute.
- Add vodka and simmer for 2-3 minutes.
- Mix in tomato paste, dried oregano, dried basil, salt, and black pepper.
- Lower the heat and stir in heavy whipping cream until smooth.
- Add the cooked penne pasta and toss to coat in the sauce, using reserved pasta water to thin if needed.
- Stir in grated parmesan cheese until melted and serve hot.

Adjust the quantity of vodka for a milder flavor, or substitute with broth.
