Description

This Peri-Peri Chicken is a flavor-packed dish featuring juicy chicken quarters marinated with vibrant herbs and spices. It’s perfect for weeknight dinners or gatherings, bringing both excitement and homemade comfort to your table.


Ingredients

  • lb chicken quarters
  • 1 red bell pepper
  • 4 birds' eye chilies
  • 5 garlic cloves
  • 1 small onion
  • 4 to 5 sprigs thyme
  • 1 tsp black pepper
  • 2 tsp salt
  • 2 tbsp paprika
  • ¼ cup vinegar
  • 1 lemon (juiced)
  • ½ cup olive oil
  • 1 bouillon cube


Instructions

  • Blend all marinade ingredients until smooth.
  • Marinate chicken with the mixture for at least 1 hour.
  • Preheat oven to 350°F.
  • Arrange marinated chicken in a baking pan and bake for 30 minutes.
  • Flip chicken and baste with remaining marinade, bake for another 30 minutes.
  • Use grill function for a few minutes for added char.
  • Serve hot with preferred sides.
