- 3 cups shredded sharp cheddar cheese
- 4 oz. cream cheese
- ¼ cup mayonnaise (duke’s brand is my favorite)
- ½ teaspoon onion powder
- ½ teaspoon garlic powder
- ¼ teaspoon paprika
- ¾ teaspoon celery salt
- 3 tablespoons chopped pimentos
- 1 tablespoon pimento juice/brine
Instructions
- Shred the sharp cheddar cheese and set it aside.
- In a bowl, combine the cream cheese and mayonnaise. Mix thoroughly, using a hand mixer if needed.
- Season the mixture with onion powder, garlic powder, paprika, and celery salt. Stir well to incorporate all the flavors.
- Add the chopped pimentos and pimento juice/brine to the mixture, stirring to combine. If the mixture appears too wet, refrigerate it to firm up before serving.
- Gently fold in the shredded cheddar cheese until just combined.
- Serve right away or chill until ready to serve.
Notes
For a healthier option, consider using low-fat cream cheese.
Pimento Cheese can be stored in the refrigerator for up to a week.
