Ingredients

  • 2 tablespoons extra-virgin olive oil
  • ¼ cup fresh lime juice
  • 1 ½ pounds portobello mushrooms
  • 1 small red onion
  • 1 red bell pepper
  • 1 orange bell pepper
  • 1 yellow bell pepper
  • 12 (6-inch) tortillas
  • Salsa or hot sauce
  • Guacamole
  • Fresh cilantro leaves
  • Lime wedges


Instructions

  • Preheat oven to 450°F (232°C).
  • In a bowl, mix taco seasoning, olive oil, and lime juice.
  • Add mushrooms, onion, and bell peppers to the marinade; toss well.
  • Spread on a rimmed sheet pan with space between items.
  • Roast for about 20 minutes until veggies are softened and slightly charred.
