Ingredients

  • 4 cups red cabbage, finely shredded
  • 1 cup matchstick carrots or shredded carrots
  • 1/4 cup fresh parsley, finely chopped
  • 2 tablespoons red onion, very thinly sliced, optional
  • 3 tablespoons olive oil
  • 2 tablespoons apple cider vinegar or white wine vinegar
  • 1 1/2 tablespoons honey
  • 1 teaspoon dijon mustard
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper


Instructions

  1. In a large bowl, combine the red cabbage, carrots, parsley, and optional red onion.
  2. In a separate small bowl or jar, whisk together the olive oil, vinegar, honey, Dijon mustard, salt, and pepper until fully mixed.
  3. Pour the dressing over the cabbage mixture and toss until all ingredients are well coated.
  4. Allow the slaw to rest for 15 to 20 minutes to let the cabbage soften and the flavors blend together.
  5. Before serving, toss again and adjust seasoning with additional salt, pepper, vinegar, or honey if desired.
