Description

Ingredients

  • 1 delicata squash
  • 1 tablespoon olive oil
  • 1 clove garlic (minced)
  • 1 teaspoon fresh rosemary (chopped)
  • ¼ teaspoon salt
  • ⅛ teaspoon pepper
  • 2 tablespoons parmesan (freshly grated)
  • 1 teaspoon fresh parsley (chopped)
  • 1 pinch Maldon sea salt (optional)


Instructions

  • Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • Slice the delicata squash in half, scoop out the seeds, and cut into ½ inch crescent-shaped slices.
  • Toss the squash with olive oil, minced garlic, chopped rosemary, salt, and pepper on the baking sheet.
  • Roast for 20 minutes, or until the edges are golden and squash is tender.
  • Sprinkle with grated parmesan while hot and toss in chopped parsley if desired.
  • Serve warm as a side dish or in salads.
