- 1 teaspoon fresh parsley (chopped)

Instructions
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Slice the delicata squash in half, scoop out the seeds, and cut into ½ inch crescent-shaped slices.
- Toss the squash with olive oil, minced garlic, chopped rosemary, salt, and pepper on the baking sheet.
- Roast for 20 minutes, or until the edges are golden and squash is tender.
- Sprinkle with grated parmesan while hot and toss in chopped parsley if desired.
- Serve warm as a side dish or in salads.
