Description

This comforting Roasted Pork and Apples dish brings together tender pork, caramelized apples, and a flavorful cider sauce. Perfect for weeknight dinners or special occasions, it’s quick and delicious!

Ingredients

  • Pork Tenderloin (1.25-1.5 lb)
  • Avocado Oil (2 Tbsp)
  • Dried Thyme (1.5 tsp total)
  • Garlic Powder (1 tsp)
  • Ground Cinnamon (1/2 tsp)
  • Coarse Salt (2.5 tsp total, adjust to taste)
  • Black Pepper (1.5 tsp total)
  • Sweet Apples (1 lb)
  • Vidalia Onion (1)
  • Unsalted Butter (3 Tbsp)
  • Apple Cider (1/2 cup)
  • Chicken or Vegetable Broth (1/2 cup)
  • Apple Cider Vinegar (3 Tbsp)

Instructions

  • Preheat the oven to 400°F and grease a 12-inch cast-iron skillet.
  • Mix dried thyme, garlic powder, ground cinnamon, salt, and black pepper in a small bowl.
  • Sear the seasoned pork tenderloin in the skillet until golden brown, then set aside.
  • Sauté sliced Vidalia onion in the same skillet until fragrant, then add sweet apples and cook until tender.
  • Nestle the tenderloin in the skillet with apples and onions, add apple cider and broth, then roast for 20 minutes until the pork reaches 145°F.
  • Let the pork rest for 10 minutes before slicing.

Notes

Always remove the silverskin from the pork for tenderness.
Allow pork to come to room temperature before cooking for even cooking.
Searing well is important for adding flavor to the dish.
