  • 2 ¾ to 1 pound pork tenderloins
  • 2 tablespoons olive oil
  • 2 teaspoons Dan-O's original seasoning
  • 1 teaspoon kosher salt
  • ½ teaspoon fresh cracked pepper
  • ½ teaspoon paprika
  • ¼ teaspoon red chili flakes (optional)
  • 4 tablespoons butter
  • 1 lemon (zested)
  • 2 tablespoons chopped fresh parsley


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Combine Dan-O's seasoning, salt, paprika, and pepper in a small bowl. Rub the mixture over the pork tenderloin.
  3. Mix lemon zest and parsley in a separate bowl and set aside.
  4. Heat a cast-iron skillet over medium-high heat. Add olive oil and sear the pork tenderloin on all sides. Turn off the heat, add butter, and sprinkle with lemon zest and parsley. Cover with aluminum foil.
  5. Place the skillet in the oven and roast for 20-25 minutes, until the internal temperature reaches 145°F (63°C).
  6. Remove from the oven and let the pork rest for 10 minutes. Slice, drizzle with pan juices, garnish with additional parsley, and serve.
