Sausage Spinach Tortellini Soup is a flavorful dish packed with Italian sausage, tender tortellini, and fresh spinach. This easy-to-make soup is perfect for a cozy dinner, bringing comfort and nutrition in every bowl.

- 1 tablespoon olive oil
- 1 medium yellow onion diced
- 1 lb italian sausage mild or spicy
- 4 cloves garlic minced
- 6 cups chicken broth
- 1 28-ounce can crushed tomatoes
- 1 1/2 teaspoon dried oregano
- 1 1/2 teaspoon dried basil
- 1/4 teaspoon red pepper flakes optional
- 1 9-ounce package of refrigerated cheese tortellini
- 4 cups fresh spinach packed
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium-high heat. Add the diced onion and cook for 4–5 minutes until softened.
- Add the italian sausage to the pot, breaking it up with a spoon, and cook until browned. Drain any excess grease.
- Stir in the minced garlic and cook for about 1 minute until fragrant.
- Pour in the chicken broth, crushed tomatoes, dried oregano, dried basil, and red pepper flakes. Stir well, bring to a boil, then reduce heat and let it simmer for 20–30 minutes.
- Add the cheese tortellini to the pot and simmer for 4–6 minutes, or until the tortellini are tender.
- Remove the pot from heat, stir in the fresh spinach, and cover. Let sit for 1–2 minutes until the spinach wilts. Season with salt and pepper to taste.
- Serve hot and enjoy!
Notes
You can use spicy sausage for an extra kick.
