Shrimp Scampi Pasta is a quick, flavorful dish featuring succulent shrimp, a buttery garlic sauce, and vibrant lemon. Perfect for weeknight dinners or special occasions!
Ingredients
- Angel Hair Pasta (⅓ pound)
- Jumbo Shrimp (1 pound)
- Creole Seasoning (1 teaspoon)
- Unsalted Butter (2-3 tablespoons)
- Medium Onion (½, diced)
- Tomatoes (1-2, diced)
- Minced Garlic (1 tablespoon)
- Red Pepper Flakes (½ teaspoon)
- Fresh Parsley (2 tablespoons, chopped)
- Lemon Juice (1 lemon, juiced)
- Chicken Broth (¾-1 cup)
- Salt and Pepper
- Parmesan Cheese (1 cup, freshly grated)
Instructions
- Boil a large pot of salted water and cook the angel hair pasta for 3-5 minutes until al dente. Drain and set aside.
- Melt butter in a skillet, season shrimp with Creole seasoning, and sauté until pink and opaque. Remove shrimp and set aside.
- In the same skillet, add more butter, sauté onion, garlic, tomatoes, and red pepper flakes until onions are translucent.
- Pour in chicken broth, parsley, and lemon juice. Simmer until slightly thickened. Adjust seasoning if needed.
- Add cooked pasta to the skillet, tossing to coat with the sauce. Add reserved pasta water if needed.
- Return shrimp to the skillet, mix gently, and heat through. Serve with Parmesan cheese and lemon wedges.
Notes
Reserve a bit of pasta water to help adjust the sauce consistency if needed.
Feel free to substitute shrimp with chicken or tofu if desired.
This dish can be made ahead and assembled just before serving.
