- 1 kg beef brisket joint (2 lb)
- 250 ml beef stock (broth, 1 cup)
- 1 large onion
- 3 garlic cloves
- 1 tablespoon tomato paste
- 1 tablespoon worcestershire sauce
- 3 tablespoon vegetable oil
- 1 tablespoon cornflour (corn starch)
- 1 teaspoon salt
- ¼ teaspoon black pepper
- 2 bay leaves
Instructions
- Heat the vegetable oil in a large pot and sear the beef joint, seasoned with half the salt and pepper, until browned all over.
- Transfer the seared beef to the slow cooker.
- In the same pot, sauté the chopped onion and garlic with the remaining salt and pepper until golden.
- Add the beef stock to the pot, followed by the tomato paste, Worcestershire sauce, and bay leaves. Stir well and pour this mixture over the beef in the slow cooker.
- Select high heat and cook for 5-6 hours or low heat for 9-10 hours.
- When the cooking time is up, combine the cornflour with 2 tablespoons of water to form a slurry, and stir it into the cooking liquid to thicken.
- Take the beef out of the slow cooker, wrap it in foil to rest while the gravy thickens.
- For quicker thickening, transfer the gravy to a pan on medium heat for 2-3 minutes, as it can take longer in the slow cooker.
- Slice or shred the beef and serve it alongside the thickened onion gravy.
Notes
The beef brisket can be cooked on low for a more tender result if you have the time.
You can add vegetables like carrots or potatoes for a complete meal inside the slow cooker.
