Description

Ingredients

  • 1 pound boneless skinless chicken breasts
  • 1 cup matchstick carrots
  • 1 red bell pepper, sliced
  • ⅔ cup lite soy sauce
  • ½ cup hoisin sauce
  • 2 tablespoons oyster sauce
  • 4 tablespoons brown sugar
  • 4 cloves garlic, minced
  • ½ teaspoon red chili flakes
  • 8 ounces sugar snap peas
  • 2 scallions, chopped
  • sesame seeds, optional
  • 14 ounces lo mein noodles


Instructions

  1. Place the chicken breasts at the bottom of the slow cooker.
  2. Layer the matchstick carrots and sliced red bell pepper on top of the chicken.
  3. In a bowl, mix together the soy sauce, hoisin sauce, oyster sauce, brown sugar, minced garlic, and red chili flakes.
  4. Pour the sauce over the chicken and set the slow cooker to low for 6 hours or high for 4 hours.
  5. About 15 minutes before serving, remove the chicken, shred it, then return it to the slow cooker along with the sugar snap peas.
  6. Stir everything well and cover for 15 minutes while cooking the noodles.
  7. Prepare the lo mein noodles according to package instructions and drain.
  8. Add the cooked noodles to the slow cooker and toss to combine with the sauce.
  9. Top with chopped scallions and optional sesame seeds before serving.

Notes

Adjust the heat by varying the amount of red chili flakes used.
Feel free to add more vegetables to suit your taste!
Serve with extra soy sauce on the side for drizzling.
