Description

Enjoy the rich, savory taste of Slow Cooker Copycat Chipotle Carnitas. This dish features tender, shredded pork cooked with aromatic spices and chicken stock for an effortless and delicious meal, perfect for tacos, burritos, or a comforting dinner.


Ingredients

  • 3-4 pound boneless pork roast
  • 2 cups chicken stock
  • 2 teaspoons salt
  • 2 teaspoons pepper
  • 3 bay leaves
  • 1 teaspoon dried thyme
  • 3 sprigs rosemary


Instructions

  1. Place the pork roast into the slow cooker and pour the chicken stock over it.
  2. Sprinkle the salt, pepper, bay leaves, thyme, and rosemary on top of the pork.
  3. Cover with the lid and cook on low for 6 hours or high for 4 hours.
  4. Once the pork is tender and easily falls apart, discard excess fat and shred the meat.
