Instructions
- Whisk together cream of celery soup and half-and-half until smooth.
- Layer half of the sliced potatoes, ham, thyme, onion, and garlic in the slow cooker.
- Drizzle half of the creamy mixture and sprinkle half of the cheddar cheese over the layers.
- Repeat layering with remaining ingredients, reserving some cheese for later.
- Cover and cook on low for 5 to 6 hours until potatoes are tender.
- Sprinkle remaining cheese on top and cook for an additional 10 minutes until melted.
- Let rest for 10-15 minutes, then garnish with green onions.
