Description

This cozy dish features tender potatoes and savory ham in a rich, creamy sauce, making it perfect for family dinners or gatherings. A true comfort food!


Ingredients

  • 1 can cream of celery soup (undiluted)
  • 1 cup half-and-half
  • 2 ½ pounds red potatoes (cut into 1/4 inch slices)
  • 1 teaspoon dried thyme
  • ½ white onion (diced)
  • 2 cups fully cooked ham (cut into bite-sized pieces)
  • 3 cloves garlic (minced)
  • 2 ½ cups cheddar cheese (shredded)
  • Green onions


Instructions

  • Whisk together cream of celery soup and half-and-half until smooth.
  • Layer half of the sliced potatoes, ham, thyme, onion, and garlic in the slow cooker.
  • Drizzle half of the creamy mixture and sprinkle half of the cheddar cheese over the layers.
  • Repeat layering with remaining ingredients, reserving some cheese for later.
  • Cover and cook on low for 5 to 6 hours until potatoes are tender.
  • Sprinkle remaining cheese on top and cook for an additional 10 minutes until melted.
  • Let rest for 10-15 minutes, then garnish with green onions.
