Ingredients
- Salted Butter (1 cup/2 sticks)
- Brown Sugar (1 cup)

- Peanut Butter (1 cup)
- Eggs (2)

- Quick Oats (1 cup)

Instructions
- Preheat oven to 350°F and line baking sheets with parchment paper or silicone mats.
- Beat softened butter in a bowl for 2 minutes until creamy.
- Add brown sugar and white sugar, plus peanut butter. Beat until fluffy.
- Mix in eggs and vanilla until well combined.
- In another bowl, mix flour, salt, and baking soda, then gently incorporate into the wet ingredients.
- Fold in quick oats, old-fashioned oats, and M&Ms until just combined.
- Chill dough for at least 1 hour, preferably up to 3 hours or overnight.
- Scoop dough into 2-inch balls on baking sheets, spacing them apart.
- Bake for 10-12 minutes until edges are firm but centers are shiny.
- Add extra M&Ms and candy eyes on top before cooling on a wire rack.
