- 10 tbsp neutral oil canola, sunflower, vegetable
- 1 ¼ cups light brown sugar
- 1/2 cup unsweetened applesauce
- 1 tsp vanilla extract
- 1 tsp pumpkin pie or apple pie spice blend
- ½ tsp salt
- 2 cups oat flour
- 1 tsp baking soda
- 1 ½ cups chopped pecans
- 2 ½ cups rolled oats
- ¾ cup dried cranberries
Instructions
- Prepare a 9" x 13" baking pan with parchment and preheat the oven to 350°F.
- In a large bowl, combine the oil, sugar, and applesauce, blending with a hand mixer until emulsified well.
- Ensure there are no oil droplets in the mixture; then add the vanilla, spice blend, and salt.
- Mix in the baking soda and oat flour, stirring until smooth.
- Fold in the cranberries, chopped pecans, and oats gently.
- Spoon the mixture into the prepared baking pan, spreading it evenly.
- Bake for about 25 minutes, until golden brown and puffy, ensuring edges are firm and the center remains slightly soft when tilted.
- Allow the bars to cool for at least 30 minutes before cutting into 24 pieces; for best results, let them cool completely before cutting.
- Store in an airtight container at room temperature for up to three days, or freeze for up to one month, thawing at room temperature before serving.
