Description

Spicy Edamame Peanut Noodles offer a delightful mix of flavors with a creamy peanut sauce and fresh vegetables. This quick dish is perfect for a nutritious dinner.


Ingredients

  • 12 ounces soba noodles, substitute whole wheat spaghetti
  • 1 teaspoon sesame oil
  • 1 cup shelled edamame
  • 1 medium carrot, julienned
  • 1 red bell pepper, thinly sliced
  • 3 green onions, thinly sliced
  • ¼ cup chopped cilantro, for garnish
  • ¼ cup roasted peanuts, roughly chopped
  • 1 teaspoon sesame seeds, for garnish
  • ½ cup creamy peanut butter
  • 1 tablespoon warm water, adjust, to thin sauce as needed
  • 3 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 2 tablespoons maple syrup
  • 1 tablespoon sesame oil
  • 1 tablespoon sriracha, or chili garlic sauce, adjust to spice level
  • ½ lime juice


Instructions

  • Bring 4 quarts of water to a boil in a large pot. Add noodles and cook according to package directions until tender. Drain, rinse under cool water, and toss with 1 teaspoon sesame oil to prevent sticking. Set aside.
  • In a medium bowl, whisk peanut butter and 1 tablespoon warm water until smooth. Add soy sauce, rice vinegar, maple syrup, sesame oil, sriracha, and lime juice. Whisk until smooth and creamy, and adjust thickness as needed.
  • Microwave or sauté edamame in a skillet over medium heat until warmed through, about 2 minutes.
  • In a large mixing bowl, toss the cooked noodles with the sauce until fully coated.
  • Add edamame, carrots, bell pepper, and green onions. Toss again to combine.
  • Garnish with cilantro and chopped peanuts before serving.

Notes

For added spice, increase the amount of sriracha or chili garlic sauce.
Feel free to substitute your favorite vegetables based on season.
Serve immediately for the best texture and flavor.
