- 2 cups buttermilk
- 2 adobo chipotle peppers in sauce
- 1/4 cup tabasco sauce
- 1 tbsp worcestershire sauce
- 1/2 tsp kosher salt
- 1/2 tsp black pepper
- 8 chicken pieces a mix of wings, legs, thighs, and breasts
- 1 cup all-purpose flour
- 1/4 cup cornstarch
- 1/2 tbsp kosher salt
- 1/2 tbsp smoked paprika
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tsp italian seasoning
- 1/2 tsp black pepper
- 1/2 tsp cayenne pepper
- 2 tsp buttermilk
- vegetable oil for frying
Instructions
- Combine buttermilk, chipotle peppers, Tabasco sauce, Worcestershire sauce, kosher salt, and black pepper in a blender and blend until smooth.
- Transfer the marinade to a large bowl, add the chicken, ensuring it's fully submerged. Cover and refrigerate for 5-6 hours, then allow to reach room temperature for 30-40 minutes before frying.
- In a plastic bag, mix together flour, cornstarch, kosher salt, smoked paprika, onion powder, garlic powder, Italian seasoning, black pepper, and cayenne pepper.
- Drizzle buttermilk into the flour mixture and stir with a fork until crumbly.
- Using tongs, add one piece of chicken to the flour bag at a time, coating thoroughly and shaking off excess. Place each coated piece on a parchment-lined baking sheet and refrigerate for 20 minutes.
- Heat vegetable oil in a cast iron skillet or dutch oven to 350 degrees, about ¾ inch deep.
- Remove chicken from the refrigerator and let it return to room temperature for 10 minutes. Fry pieces in batches for 13-15 minutes, turning halfway, until golden brown and internal temperature reaches 165 degrees.
- Drain fried chicken on paper towels and keep in a preheated oven to stay warm while you finish up the frying.
Notes
For extra flavor, consider soaking the chicken in the marinade overnight.
The frying oil should be maintained at 350 degrees to achieve the perfect crispiness.
